The Raja Mircha does not season; it speaks. In Naga kitchens heat is syntax — a way to structure a meal, mark a guest, measure courage. The king chilli is punctuation made of fire. Used whole, smoked, or pounded into a relish, it turns the simplest plate into a sentence you cannot ignore.
Ingredients
- —Raja Mircha (king chilli)
- —Smoked or fermented soybean (axone)
- —Garlic and ginger
- —Salt
The method
- 1Roast the king chilli over open flame until blistered.
- 2Pound with garlic, ginger and a little axone.
- 3Loosen with water to a coarse relish.
- 4Salt to taste; serve in microscopic quantities.
