The lore

Every craze hides in plain sight before it erupts. Burnt honey — caramelised to the edge of bitter, then loosened with chilli and vinegar — is the condiment that turns a plain plate into an argument. It is sweet, smoky, sharp and savoury at once. The pantry already holds it. The culture just hasn't noticed yet.

Ingredients

  • Raw honey
  • Dried chilli flakes
  • A splash of vinegar
  • Flaky salt

The method

  1. 1Heat honey in a pan until it darkens and smells of caramel.
  2. 2Pull from heat the instant it edges toward bitter.
  3. 3Whisk in vinegar to loosen and chilli to wake it.
  4. 4Finish with flaky salt; bottle warm.
